Some comments about this we saw on the web:

I do find shifting is much less of an issue for a fat bike than even a cruiser - several times I was out riding and realized I’d just floated over deep dust traps that would have really been a workout on previous bikes. These bikes don’t have a front derailleur, which from my understanding is the most finicky part of a multispeed bike.At the time I bought mine, the Hitch was actually cheaper than the single-speed Beast, but I see the latter is going for $149 from Amazon at the moment: http://www.amazon.com/Mongoose-Beast-Mens-Bicycle-Black/dp/B014572VYG/ref=sr_1_1?ie=UTF8&qid=1464720009&sr=8-1&keywords=mongoose+beast
Pretty sure the only mods I made were to add heavier-duty (and larger) pedals, and a cushier seat. I am thinking of swapping out the handlebars for some kind of risers - I found the stock configuration too hard on my wrists. But then, I have a long torso - my wife has encountered no such issues.
