Regarding wiring your load off of the controller vs off the battery directly, it would be best to wire off the controller assuming that your controller has a low voltage cut-out (ie if the battery gets too low it will shut off power so you don’t damage your battery.

It is certainly worth picking some standard connector for your electronics and then making everything so that it can use those (possibly with different types of connectors for different voltages). Personally I use USB connectors for all of my 5V wiring and while I used to use barrel connectors for most of my other connections, I started getting really bad quality control issues from several suppliers of solderable barrel connectors (ymmv) so I gave up and have mostly switched to deans style T-connectors. This has it’s own issues and is gross overkill for what I’m using it for but they work for me. Others will prefer some crimp type connection or whatever. The biggest thing is just to standardize your connections.

I have very little experience with charge controllers but everything I’ve read suggests that they’re all grossly over spec’d and that you should similarly get one that is much larger than you’ll need. Your current solar setup is about 4 amp so a 10 amp controller would be fine but the price difference between the cheap 10 amp controllers and 30 amp controllers on amazon was typically about $5-10 and this way when you get another 50 watts of solar panels next year you won’t need a new controller. (I recently acquired 3 20 watt panels, just because I wanted small panels that I could pack and move around easily).

You definitely want your fan and pump to be in parallel and not in series. Otherwise they won’t get the appropriate voltage.
